Whole 30 in TWO DAYS! Shrimp Recipe

Eek!  I’m totally excited and terrified at the same time.  Have I mentioned how much I like bread and sugar?  And here is the kicker, I don’t cook.  It’s never been my thing, ever.  So I’m kind of excited to dig in and learn, but a little nervous because if I screw it up and it isn’t good I can’t just grab a peanut butter and jelly sandwich!

In the meantime, I’m compiling recipes.  Here’s one I found which uses shrimp, which I love but don’t eat very often.  I’m apologizing now to the creator of it because I don’t remember where I got it.  I’m going to do better at keeping track though.  But this one is planned for THIS Saturday so I want to share because I’m super excited and it sounds amazing.

Chili Lime Shrimp

Ingredients
25 large shrimp, peeled and deveined
1/2 cup garlic-infused olive oil (regular olive oil will do, just add 2 more large cloves of crushed garlic)
1/4 cup fresh squeezed lime juice
2 tbsp. chili powder
2 garlic cloves, crushed
1 tbsp. ginger, chopped
1/2 tsp. red chili flakes
5 wooden skewers, soaked
Limes for serving

Instructions
MIX your olive oil, lime juice, chili powder, garlic cloves, ginger, and red chili flakes in a lidded container large enough to fit your shrimp. Add in shrimp, cover container, and shake it so that the shrimp get coated in the marinade
Refrigerate for a minimum or two hours. Meanwhile, prepare your grill (I used a stovetop grill) by oiling your grill gate and setting it to medium heat.
WHEN ready, thread five shrimp to each skewer. Once your grill is hot, add the skewers and cook for 1 minute and then flip and cook for an additional minute or until shrimp is cooked through.

Whole 30 Week 1

Ok, so I’m about a week in to this Whole 30.  The first few days I felt hungry all the time!  All the time!  I felt like I was eating till I was full so I decided to add just a little bit of almond butter to the end of every meal.  I’m also drinking some of the recommended flavored water, which certainly helps.  But now that I’m ending the first week it’s getting better.  My cravings are there occasionally but not like they were the first couple of days.  I mean I wanted bread so bad!!!!   That shrimp recipe I shared a few posts back was AWESOME.  It was certainly my favorite meal so far.  Some things are rather bland so I’m working on how to give food more flavor using spices.  If you have been following, you know I have never really cooked, ever.  So this has been the challenging part.  BUT, you all have to try this salad dressing.  It’s from Primal Kitchen.  They have a ton of Whole 30 compliant food, but this is just VERY good salad dressing.  I’m going to be stocking up on it from now on.  1 week down and basically 3 to go.   #ownyourlife

Frankincense Essential Oil

This week I am spotlighting an oil known as the King of Oils because of its biblical references and the wide variety of benefits it offers. You guessed it, I’m talking about Frankincense essential oil.  One use for it that I recently discovered was to use it in a diffuser blend with Wild Orange. That is probably a known fact that the combo smells good but I just discovered how delightful it really is! Visiting doTERRA Farms

So you all, I can’t tell you how exciting this was.  I was one of the Top 50 of this program I rocked in and had the opportunity to visit two different farms doTERRA uses to source our oils.

The first farm we visited is still being run by 4th generation farmers.  How awesome is that!  Here’s a great picture of one of the frames that shows the family generation.

We had the opportunity to listen to various family members share about their partnership with doTERRA as well as see first hand the entire process.

At this farm we saw the production of Spearmint and we even each got to fill our own bottle to bring home.  SCORE!

I also have to share about one of the execs of the company, Emily.  There is something special about each one of them and not just because I drink the doTERRA kool-aid.   These people really have servant hearts.  Get this….so on the first day one of the ladies on the trip was getting a lot of motion sickness because she just found on she was pregnant. Emily had her get on the floor, took her shoes and socks off and began rubbing her feet with oils.  THE EXECUTIVE OF THE COMPANY.  She didn’t ask who had oils, who could help, she did it herself!  This made me fall in love with the company even more than I already had.

Summer Essential Oil Safety

If you have followed any of the recent social media hype about a lady getting blisters from using essential oils and then going into a tanning bed then this article is for you.  I won’t even go into the full details because she knew she was wrong, but my point is…..you are using essential oils for health benefits but then you are putting yourself on a tanning bed?!?!?  Enough said.

But because summer is all about fun in the sun with your family, let’s dive into it.  Essential oils play a big part in my life so I always want to make sure that I am using them in a way that will be beneficial and not hurt me or my family.  That’s why I am so happy that dōTERRA has published several articles about safety when using essential oils. I finished Whole 30 and still going….

So if you have been following me I recently did a Whole 30.  My goal going in was to just fight off my sugar craving.  I had been making healthier changes here and there over the past 5 years but the sugar one was a big deal to me and I knew it would be challenging.  So here is the rest of the story…

Week 1 was a little challenging.  I did have cravings and I always felt hungry.  By week 2 the sugar cravings started subsiding and as of today I don’t really have them at all.  Today is over 30 days into the program.  I could start introducing things back into my diet to ‘test’ them with my body, but I don’t really want to.  Now don’t get my wrong I’m going to eat some things that approved here and there, think Paleo, just so my body knows it is there.  I don’t want to go on vacation without a lot of good options and then get sick from eating.  I’ve learned to make better choices so tackling eating out more will be my next goal.

But….I’m staying on the program because how I feel!  I lost a little weight in my midsection, my digestive system started to improve and I can physically tell inflammation is down overall.  My back which has given me problems the past 5 years doesn’t hurt, like ever, for the most part.  I didn’t even notice it at first, but now it’s something that I just get excited about.  I feel great, I look great….why would I want to go back to the way it was before.

So if you are reading this, I encourage you to look up the program and do it.  I did it with a few other people and they are shocked at their own results.  I am even encouraging some friends to do it now as well.  So go for it…YOU are worth it!
